Southern Potato Salad

Southern potato salad is a classic dish known for its creamy and tangy flavors. Here's a traditional Southern-style potato salad recipe for you:

Ingredients
  

  • 2 1/2 pounds red or Yukon Gold potatoes peeled and cut into bite-sized cubes
  • 3 large eggs
  • 1 cup mayonnaise
  • 2 tablespoons yellow mustard
  • 2 tablespoons sweet pickle relish
  • 1 small onion finely chopped (Optional)
  • 2 celery stalks finely chopped (Optional)
  • Salt and pepper to taste
  • Paprika for garnish
  • Fresh parsley chopped, for garnish (optional)

Instructions
 

  • Boil the Potatoes: Place the potato cubes in a large pot of cold salted water. Bring the water to a boil and cook the potatoes until they are fork-tender but still hold their shape, about 10-15 minutes. Drain and let them cool slightly.
  • Hard-Boil the Eggs: In a separate pot, place the eggs and cover them with cold water. Bring the water to a boil, then reduce the heat and simmer for about 10 minutes. Drain the hot water and transfer the eggs to a bowl of ice water to cool. Once cooled, peel the eggs and chop them.
  • Prepare the Dressing: In a bowl, mix together the mayonnaise, yellow mustard, and sweet pickle relish. This will form the base of the dressing.
  • Combine Ingredients: In a large mixing bowl, add the cooked and slightly cooled potatoes. Gently fold in the chopped eggs, chopped onion, and chopped celery.
  • Add Dressing: Pour the dressing mixture over the potatoes and gently toss until the potatoes are evenly coated. Add salt and pepper to taste. Adjust the amount of dressing according to your preference.
  • Chill and Serve: Cover the bowl with plastic wrap and refrigerate the potato salad for at least a few hours, or ideally overnight. This allows the flavors to meld together.
  • Garnish: Before serving, sprinkle paprika over the top of the potato salad for color and flavor. You can also add chopped fresh parsley for a fresh touch.
  • Serve: Serve the Southern potato salad as a side dish alongside grilled meats, fried chicken, or other Southern-style dishes.
